    Tax day has come and past, so now lets look to the future.   Spring is hear and summer will be hear before you know it..

    Have you planned your family vacation.   I have access to ticket s to Bush Gardens all over the country Wet & Wild.  You name it.    Passages also has group space for land packages, cruises and many others.   No trip is to small or to large.  How important is your time.  You can research for hours or call me and have your dreams satisfied in a matter of hours or minutes in some cases.

    Try this recipe     it will put your mouth in the Caribbean    Call me and I can put the rest of you there...

    Grilled shrimp and pineapple with avocado and papaya:

    Cut two mangoes, one pineapple and two papayas ( remove seeds) into long slices. Toss in a bit of olive oil and then grill; set aside when done and place in a bowl.

    Peel 16 large shrimp, toss with oil and grill. When done, add to the bowl of pineapple and mangoes.

    Now cut 1 bunch of scallions on the bias, add 3 teaspoons of chopped cilantro.

    For your dressing, use 1/2 cup of olive oil mixed with 4 tablespoons of lime juice, two tablespoons of Siracha and 2T of sugar.

    Toss all together gently and serve with cold beer.

    Bon appetit!

    Rum Journal: How to Make a Rum Runner, Barbados Style 

    IT’S ONE of the most famous drinks (and, at one time, professions) in the Caribbean: the Rum Runner.

    But how do you make one?

    Recipes tend to vary slightly across the Caribbean (with one notable constant, naturally), but we thought we’d offer up a particular recipe from Barbados. The difference here? The rum.

    This recipe for the Rum Runner comes from Barbados’ renowned Mount Gay rum, and utilizes the company’s classic Eclipse gold rum.

    Here’s the recipe, courtesy of Mount Gay:

    Ingredients:

    1oz Mount Gay Eclipse
    1/4oz Blackberry Liqueur
    1/4oz Creme de Banana Liqueur
    2oz Orange Juice
    1/2oz Grenadine
    8oz crushed ice

    Directions:

    Pour ingredients and crushed ice in a blender. Blend until slushy and pour into hurricane glass.
